‘NAMO welcomes guest Chef Franco Palandra for two weeks

‘NAMO is honoured to welcome seasoned Italian chef Franco Palandra through our doors. Equipped with his specially curated menu full of rustic Italian charm and character, Chef Franco looks to inspire you with a collection of dishes constructed to let your tastebuds dance between some of Italy’s most iconic flavours.

With a culinary origin coloured by the traditions of Caserta cuisine, Chef Franco’s career has seen him travelling the world introducing the globe to true Italian cuisine. Taking into consideration the fresh ingredients native to Vietnam, in addition to our customers’ preferences, his exquisite menu looks to infuse authentic Italian dishes with the spirit and feel of Saigon. Between March 8 – 21, Chef Franco’s extensive yet delicately constructed menu will be available for you to experience at ‘NAMO. Expect everything between beautifully rich pan-fried scallops to gorgeous black truffle, mint-crusted lamb chops to thick, tender rib-eye ‘tagliata’ prepared sliced steak. For those who crave the taste of the coast, the menu also includes the flavours of French turbot in a paprika crust served with delicate foie gras and puff pastry as well as a full-bodied lobster tagliolini with a fresh in-house tomato sauce. This exclusive four-course menu boasts authentic Italian flavours side by side with a wine pairing option from Concha y Toro; one of the world’s most beloved and most established wine brands.

But here at ‘NAMO we are giving you the opportunity to not only indulge in Chef Franco’s impeccable menu, but to also learn how to craft some of the dishes yourself. Chef Franco will therefore be hosting two cooking classes on March 10 and 17 at ‘NAMO Hai Ba Trung; showing the secrets behind his authentic cuisine. The price is VND890,000++ per person, followed by lunch and one glass of paired wine.

On top of this, ‘NAMO is organizing a special Wine Dinner on March 15 with Red Apron, introducing a collection of premium Chilean wines by Concha y Toro; the beautiful wines paired with Chef Franco’s menu. The Chilean wine company is the largest producer of wines from Latin America and is admired and renowned across the world as one of the global leaders in wine. Wine Dinner tickets are VND1,390,000++ per person.

About Chef Franco Palandra

Throughout his career Franco has also worked in a number of roles including chef teacher at Tuscookcany and working as a catering consult for a number of high-profle clients including hotels, restaurants and coffee shops. His culinary origin is coloured by the rustic traditions of Caserta cuisine. His first experience as Head Chef started in England as he took to the seas as Head Chef aboard the Cunard Line’s Italian restaurant. After that he decided to settle back down on land in the beautiful region of Tuscany, taking on the role of Chef de Cuisine at the historic Logge Vasari restaurant.
