An Italian Christmas with Chef Franco at ‘NAMO
The Talented “Fairy Chef” returns to Saigon
The holiday season is approaching fast, and while there will be no white Christmas in southern Vietnam, ‘NAMO can still partake in joyous year-end festivities.
While personal Christmas traditions can vary widely, great food and gatherings of friends and family are a common enjoyed by nearly everyone. ‘NAMO understands this, and has flown a top Italian chef to Saigon for a special holiday menu from November 30-December 15 at both ‘NAMO locations.
Last summer, through the menus he curated, Chef Franco stole the hearts of ‘NAMO’s guests with his masterful and inventive cooking techniques. Still now, the lingering flavours of his fresh take on Italian cuisine where modernity meets authenticity never ventures far from the minds of those who experienced it. If you missed him the first time around, here’s your chance.
With a culinary origin coloured by the traditions of Caserta cuisine, Chef Franco’s career has seen him travelling the world introducing the globe to true Italian cuisine. He has crafted his special holiday menu accordingly, and as well as bringing some very special ingredients with him, these include Italian black truffles and hard-to-find ‘Vin Santo’ late harvest wine from Tuscany. These special truffles are only found this time of year in Europe, and their flavor brings subtle undertones of garlic, shallots, hazelnuts and chocolate. They are found by solo hunters using dogs, making for a labor-intensive process that contributes to their scarcity and making their presence on this festive menu a rare treat for Saigon.
Two four-course set menus specially created by Chef Franco, one focusing on seafood (VND990,000++) and the other on meat (VND1,190,000++), are on offer from November 30 to December 15. The former includes creative dishes such as amberjack stuffed ravioli, zucchini pesto, roasted cherry tomatoes and caviar, as well as herb-crusted, pancetta-wrapped and monkfish medallions with saffron sauce. The meat menu, meanwhile, serves up decadent offerings like duck stuffed tortelli with duck breast reduced orange sauce, and rosemary and thyme sous vide sanchoku Wagyu ribeye, hazelnut and herbs crumble, and reduced red wine sauce.
But here at ‘NAMO we are giving you the opportunity to not only indulge in Chef Franco’s impeccable menu, but to also learn how to craft some of the dishes yourself. Chef Franco will therefore be hosting two cooking classes on December 07 and 14 at ‘NAMO Hai Ba Trung; showing the secrets behind his authentic cuisine. The price is VND890,000++ per person, followed by lunch, one dessert and one glass of paired wine.
About Chef Franco Palandra
Throughout his career Franco has also worked in a number of roles including chef teacher at Tuscookcany and working as a catering consult for a number of high-profle clients including hotels, restaurants and coffee shops. His culinary origin is coloured by the rustic traditions of Caserta cuisine. His first experience as Head Chef started in England as he took to the seas as Head Chef aboard the Cunard Line’s Italian restaurant. After that he decided to settle back down on land in the beautiful region of Tuscany, taking on the role of Chef de Cuisine at the historic Logge Vasari restaurant.
When it comes to authentic, straightforward Italian cuisine, ‘NAMO Italian Restaurant and ‘NAMO Tuscan Grill are in a league of their own.
